What is Black Tea

Black tea is made from the leaves of a bush called Camellia sinensis. It has caffeine as well as other stimulants and antioxidants. Lots of people in the U.S. drink it either hot or cold. It should always be steeped in hot water before it is cooled.A process called oxidation turns the leaves from green to a dark brownish-black color. Oxidation means the leaves are exposed to moist, oxygen-rich air.Tea manufacturers can control the amount of oxidation. Black tea is a fully oxidized tea. Green tea comes from the same plant, but is not oxidized.Black tea extract is sometimes sold as an herbal supplement. Sometimes, the supplement includes other types of herbs, vitamins, or minerals.

Benefits of Black Tea

Promotes heart health
Black tea packs a punch when it comes to heart health. Theaflavins help to lower blood cholesterol. And flavonoids-the same antioxidants found in red wine, dark chocolate and nuts —reduce the risk of heart disease by 8%. Studies show that with every cup of tea you drink daily, you can lower your blood pressure, the risk of major cardiovascular events (such as heart attack and stroke) and the threat of death from heart disease.

Reduces the risk of stroke
Stroke-when there's a blockage in the blood vessels carrying blood to the brain-is the second leading cause of death globally. Drinking black tea may be one way to reduce your risk of stroke. Studies show that drinking at least two cups of tea daily may reduce the risk of stroke by 16% compared to people who do not drink tea.

Improves focus
Unlike some other types of tea, black tea has caffeine-about half the amount in coffee. It also contains an amino acid called L-theanine. The combination helps with alertness and focus. While caffeine on its own can induce a more jittery energy, the addition of L-theanine in black tea produces a stable and level type of energy. One smaller study examined how drinking black tea affects cognitive performance compared to drinking water. Participants who drank black tea performed better in executive function and memory tasks.

Lowers blood sugar levels
Drinking black tea without added sweeteners can decrease blood glucose and improve your body's ability to manage sugar. Research also shows that black tea improves blood sugar levels immediately following meals in normal and pre-diabetic adults.

Types of Black Tea

Darjeeling Black Teas
The northeastern region of Darjeeling on the border of Nepal and Bhutan is famous for three seasons of tea: the spring's First Flush, the early summer's Second Flush and the late summer and fall's Autumnal teas. Though they grow more subdued the farther they get from spring, all three seasonal teas have a charming rounded quality, a depth and a gentleness to rival Chinese black teas.

Ceylon Black Teas
Ceylon teas are grown in Sri Lanka. Its unique topography and climate allow for three types of tea, determined not by season but by altitude: low-grown, medium-grown and high-grown, each with its own unusual flavor profile. Ceylon was a British colony until it won independence in 1948, so while the country is now called Sri Lanka, the tea makers there have kept the name Ceylon for their teas. Ceylon teas can brew up light and bright like Lover's Leap or substantial like Kenilworth Garden. They make perfect afternoon teas and can handle milk and sugar.

Chinese Black Teas
Tea started in China, thus China has a large variety of black teas. Chinese black teas have all the mellow, sweetened effects of milk and sugar without requiring either. From the honey twinge of Golden Monkey and the Panyang teas to the chocolate of Keemuns and the smokiness of Lapsang Souchong, these teas have a range and character all their own.

How Is Black Tea Made?

Rolling
Either by machine or hand, the leaves are shaped by rolling them. This process wrings out juices and helps facilitate oxidation. When the leaves are rolled, the cell walls are broken apart, hastening oxidation, just like when you cut an apple open, and it browns faster than if you hadn't cut it.

Oxidation
Black tea leaves must be oxidized. Oxidized is just a fancy way of saying that the leaves wither after being picked as they are exposed to oxygen. The leaves darken to a black or brown color in this chemical reaction. Oxidation can be controlled by adjusting the room temperature, and it is stopped by exposing the leaves to heat (steaming, pan-frying, or baking).

Picking

Black Tea leaves must be picked. The bud and top leaves are selected, and then they are sorted for uniformity

Withering

Passive oxidation begins once the leaves are plucked and left to wither. The leaves wilt and soften; this prepares them for rolling.

Firing

The final step is firing the leaves. Firing stops oxidation and removes moisture from the leaves. The finished loose leaf Black Tea is then ready to be enjoyed.

Five Ways To Store Black Tea

1

Store them in low temperature
The good way of storing food in refrigerator to keep them fresh is also can be applied to tea storage. When doing this, you'd better pack them in sealed package first to avoid odor and moisture which can damage tea color and taste. At the same time, another thing you should keep in mind is that long preservation in refrigerator can downgrade tea quality as well, even if the rate is slow. So, you should consume them as fast as you can. Generally, Black tea can be stored well in dry conditions with temperature blew 5 degrees Celsius for more than 1 year.

2

Store them in iron tins
One convenient way to store dry black tea leaves is to put them in a airtight “tins”. Before doing this, you should examine your container carefully to make sure that they are in good airtight condition without any leaks. This way is easy and low-cost but not a good choice for long-term storage.

3

Store them in vacuum flask
A vacuum flask is a container that is used to keep hot drinks hot or cold drinks cold. It has two silvery glass walls with a vacuum between them. Except for keeping water, it is also can be used for tea storage. Now, I will show you how to use it. Firstly, you need to clean them and let them dry. Secondly, fill your vacuum flask with dry leaves (gently and slowly) as much as you can to expel air vacuum flask out then close it with a cork. Thirdly, cover the cork with white wax then sticky tape to seal it tightly. Generally, benefiting from relatively moderate temperature, teas in vacuum flask can maintain fresh for relatively long time.

4

Charcoal-Sealed method of storing black tea
Charcoal possesses the characteristic of absorbing moisture and so some people take advantage of this to store black tea. The dry charcoal needed to be wrapped in a piece of clean cloth and then put in tea container such as a lidded earthen jar. Thereafter, you should examine them and replace them with dry new charcoal regularly to keep inner as dry as possible.Note: Charcoal is a black substance obtained by burning wood without much air.

5

Keep it in airtight ceramics Jar (clay pot)
There is another way of storing black tea you may be interested in. Firstly, prepare a small dry, clean clay pot with a small bag of lime powder inside. Secondly, put tea bags onto or around the small lime powder bag (which can soak up excessive water vapor) one by one until with no more room left. Thirdly, cover the pot with a bag of cotton as tightly as possible. To keep inner dry, the lime powders needed to be changed every one or two months. After a relatively long time, teas stored in a relatively long time can still have good taste without any mildew.

FAQ

Q: What Kinds of Tea Are There?

A: Looking at processing methods (actually, degree of oxidation), there are six types of tea:
Black tea, also known as red tea in Chinese-this is fully oxidised
Green tea-this refers to barely oxidised (oxidation starts from the moment you pluck the leaf so I won't say it's 9% oxidised) tea that also goes through withering process(withering = remove excess water). We can think of green tea as being minimally processed.
White Tea-the least processed type of tea, all you do here is dry the leaves.
Oolong tea/blue tea-Oolong is a broad category referring to partially oxidised teas. There is no set percentage of oxidations which is why some oolongs are closer to green teas while others are closer to black teas
Yellow teas-Yellow teas are pretty rare but basically, there is a period of yellowing the leaves (they place it in a heap and let the heat do its work) to mellow it out further. It's got a slightly nutty note, compared to green tea, in my experience
Dark tea, also known as black tea in Chinese-these are teas which have been post-fermented (i.e. has good mold growing on them, like blue cheese). Puer is probably the most famous example (though some people are campaigning to make puer it's own category) but there are post-fermented teas outside of China too, like the Goishicha tea from Japan.
